Kale Chips

You either love kale or you don’t, there’s no in between. I love the taste, the nutritional value and one of my favourite go to snacks are kale chips. I make them when I have kale in the fridge that’s getting close to its end date. Such a great way to use it up so you’re not throwing anything out.

Ingredients

1 x bunch of Kale

Coconut oil

Himalayan sea salt

Pepper

Directions

Preheat the oven to 180 degrees (fan forced).

Wash the kale and let it dry.

Once dry, take the Kale off the stem and place them onto a lined oven tray.

When all the kale is flat on the tray I season it with sea salt, pepper and a small amount of coconut oil.

Put the tray in the oven and bake for approximately 5-10 minutes – or until the edges of the kale are brown. I always stand by and watch these while they cook so they don’t burn.

Super Salad

Super Salad

This gorgeous Super Salad was inspired by Sarah Wilson’s fabulous book, Simplicious Flow and her Rainbow Grater Salad. I absolutely love it because it’s super simple, healthy and easy to make. I love making a big batch of this at once so it lasts a few days.

Ingredients

1 x zucchini

1 x large beetroot (peeled)

2 x handfuls of kale

1 x large carrots

1 x head of brocoli (I use the floral shoots for the salad and then freeze the stems. I roast these and use them in soups).

1 x green apple

1 x red capsicum

6 x basil leaves

Previously I’ve added these ingredients to the Super Salad

1 x red onion

3 x hard boiled eggs

A handful of pumpkin seeds or sunflower seeds

2 x handfuls of Silver beet

2 x handfuls of baby spinach

I use whatever I have in the fridge at the time and I don’t use measurements. I love putting in all the colours. You can’t go wrong with vegetables.

Step 1

I chop all the ingredients into small pieces in a blender and add them to a bowl, including the eggs (make sure the eggs are cool before you add them). Alternatively you can add the eggs when you serve the salad. I purely love the idea of including them in the initial mix because it’s simple and it saves time. I’ve found vegetables like cucumber and tomato tend to go very soft if you include them in the initial mix so if I feel like these I put them on later when I’m serving the salad.

Step 2

The salad is lovely dressed with olive oil, apple cider vinegar, salt and pepper. Those that know me know I love chilli so I often add a bit of spice in the salad and smoked paprika is beautiful. The Super Salad is also beautiful dressed with lemon juice and olive oil or simply on its own.

Step 3

I love to add a tin of tuna for a quick lunch, a piece of fish or it’s beautiful with chicken.
